Panama City 3 Bottom Fishing Adventure

Get ready for some serious bottom fishing action in the emerald waters off Panama City, Florida. This seasonal trip runs from May through August when the Gulf of Mexico is at its absolute prime for targeting heavyweight game fish. You'll be heading out to some of the most productive fishing grounds along the Emerald Coast, where three distinct bottom structures hold different species and offer non-stop action. With only four anglers max, you'll have plenty of elbow room and personalized attention to make the most of your day on the water. This isn't your typical inshore trip – we're talking about serious offshore fishing where trophy-sized kings, wahoo, and cobia cruise the deeper waters.

What to Expect on the Water

Your day kicks off early as we head out to the first of three bottom fishing spots that have been producing consistent action throughout the season. Each location offers something different – from rocky ledges where cobia love to cruise, to deeper drop-offs where king mackerel patrol in schools. The beauty of this trip is the variety you'll experience as we move between spots, adjusting our techniques and bait selection based on what's biting. You'll spend roughly equal time at each location, giving you the best shot at filling your cooler with a mixed bag of premium Gulf species. The water clarity during these summer months is usually outstanding, often letting you see 40-50 feet down, which makes spotting fish and reading the bottom structure much easier. PCB Water Adventures has been running these routes for years, so you're fishing with local knowledge that can't be bought – only earned through countless hours on the water.

Trolling Tactics & Bottom Rigs

We'll be mixing up our approach throughout the day, starting with trolling techniques to cover water and locate active schools before settling in for more targeted bottom fishing. The trolling spread typically includes a mix of live bait and artificial lures, with cigar minnows and blue runners being absolute king mackerel magnets during this time of year. Once we mark fish or hit a productive structure, we'll switch to bottom rigs with circle hooks and fresh cut bait – usually bonito, mackerel, or whatever we've caught while trolling. The key is staying flexible and reading what the fish want on any given day. Some days they'll crush a fast-moving spoon, other times they want a slow-trolled live bait. The three different bottom locations we hit each have their own personality – some are hard bottom with coral heads, others are sandy flats with scattered rocks, and each attracts different species at different times of the day. You'll learn to read your fish finder, feel the difference in bottom composition through your rod tip, and understand why certain baits work better at specific depths and structures.

Top Catches This Season

King mackerel are the bread and butter of this trip, and Panama City's waters produce some real monsters during the summer months. These silver bullets can stretch over three feet and pull drag like a freight train, making multiple screaming runs that'll test your endurance and technique. They're most active during the early morning and late afternoon hours, often showing up in schools that can provide fast action for everyone on board. Wahoo are the speed demons of the Gulf, capable of hitting 60 mph and stripping line faster than you can believe. They're less predictable than kings but when they show up, usually around the deeper structures, they make for some of the most exciting fights you'll ever experience. Crevalle jack might not win any beauty contests, but pound for pound they're some of the strongest fighters in these waters, often mistaken for much larger fish when they first hit. Cobia are the gentle giants that cruise near the surface around structure, often curious enough to come check out the boat – sight fishing for these bronze beauties is a real treat when conditions are right. Spanish mackerel round out the action with their aggressive strikes and acrobatic jumps, perfect for keeping things lively between the bigger bites.

Species You'll Want to Hook

King mackerel are Panama City's claim to fame, with fish ranging from schoolie-sized "snakes" up to true trophy fish pushing 40+ pounds. They're most active from May through August when baitfish are abundant, and they'll hit everything from live cigar minnows to slow-trolled dead baits. What makes kings so exciting is their unpredictability – they might tap the bait gently before a crushing strike, or they could nearly rip the rod out of your hands on the initial hit. The bigger fish tend to stay deeper during midday heat, making those early morning and evening bites absolutely crucial.

Wahoo are the missiles of the offshore world, with their razor-sharp teeth and incredible speed making them a prize catch for any angler. These fish prefer the cleaner blue water found around the deeper structures, typically showing up when we're fishing in 80+ feet of water. They're notorious for cutting lines with their teeth, so we use wire leaders and stay ready for their lightning-fast strikes. Most wahoo caught in Panama City waters during summer run between 15-30 pounds, but the occasional 40+ pounder shows up to make your day memorable.

Crevalle jack are the workout of the trip, with their broad shoulders and never-give-up attitude providing some serious arm-burning action. They school up around structure and will hit just about any bait presented properly, making them great for keeping kids or inexperienced anglers engaged. Don't let their fighting ability fool you into thinking you've hooked something bigger – these 10-20 pound jack can pull harder than fish twice their size.

Cobia are the curious cats of the Gulf, often approaching the boat to investigate before deciding whether to bite. They're excellent table fare and put up a strong, bulldogging fight that's different from the speed runs of kings and wahoo. Summer months bring cobia into shallower waters where they cruise around structure looking for crabs and small fish. Sight fishing for cobia when they come to the surface is one of the most exciting parts of this trip.

Learn more about the species

Cobia

Cobia are unique fish that often get mistaken for sharks with their dark brown color and single dorsal fin. These hefty fighters average 20-40 pounds and love structure like reefs, wrecks, and oil rigs in 30-70 feet of water. Spring through summer is prime time when they're spawning and most active. What makes cobia special is their curious nature - they'll actually follow the boat and check out lures. The fight is powerful and determined, with strong runs and head-shaking battles. Best part is the table fare - firm, white meat that rivals any premium fish. They're usually solitary, so sight fishing works great. Bucktail jigs in 4-8 oz work best around structure. Pro tip: when you see one, slow down and make multiple casts - they're not easily spooked and will often eat on the second or third presentation.

Cobia

Crevalle Jack

Crevalle Jack are the bullies of our waters, typically running 3-5 pounds but capable of hitting 20+ pounds. These brassy fighters love shallow structure, grass flats, and anywhere baitfish school up. During summer months, they're aggressive surface feeders that'll crush topwater lures and spoons. Watch for diving birds - that's usually jacks pushing bait to the surface. What makes them fun is their raw power and stubborn fight. They'll pull drag and never quit, making even smaller fish feel like tanks. They're not great table fare, but the action more than makes up for it. The trick is fast retrieves with silver spoons or swimbaits - they love the chase. Cast past the school and burn it back fast. Pro tip: some folks say you can smell watermelon when big schools are feeding nearby.

Crevalle Jack

King Mackerel

King Mackerel are some of the fastest fish in the Gulf, averaging around 30 pounds but capable of reaching 90+ pounds. These olive-backed speedsters cruise our deeper waters from 40-150 feet, especially around structures and drop-offs. They're voracious predators that'll hit trolled spoons, live bait, and jigs with serious authority. What makes them special is their blistering runs - they'll peel drag like few other fish. The meat is excellent when fresh, with a rich flavor that's perfect grilled or blackened. During our May-August season, they're actively feeding and easier to locate. Pro tip: always use a wire leader since their razor-sharp teeth will slice through mono in seconds. When you hook one, hold on tight - they don't give up easy and that first run will test your drag system.

King Mackerel

Spanish Mackerel

Spanish Mackerel are fast, scrappy fish that typically run 1-2 feet long and pack serious speed at 18+ mph. These silver speedsters with yellow spots love nearshore waters, grass flats, and around structure where baitfish gather. They school up during warmer months and are surface feeders that'll hit small spoons, jigs, and live shrimp. What guests enjoy is their willingness to bite and acrobatic fights - they'll jump and make multiple runs. They're also excellent eating with mild, flaky meat that's perfect fried or grilled. During our season, look for them around piers, jetties, and oyster bars in 10-30 feet of water. The key is light tackle and fast retrieves with shiny lures. Pro tip: use a wire leader or they'll bite through your line, and don't be afraid to downsize your lures - smaller is often better with these guys.

Spanish Mackerel

Wahoo Fish

Wahoo are the speed demons of our waters, hitting 60 mph and averaging 3-5 feet long. These blue-striped bullets love our deeper trolling zones and oil rigs, usually in 60+ feet of water. They're most active during summer months when baitfish are thick. What guests love is the pure violence of their strike - they'll absolutely hammer a high-speed lure at 12-15 knots. The fight is fast and furious, with long screaming runs that'll empty your spool quick. Table fare doesn't get much better - firm white meat that's mild and flaky, perfect for tacos or steaks. The key to landing wahoo is speed trolling with wire leaders since their teeth are like razors. Don't slow down when you see one following - keep that lure moving fast and they'll usually commit to the bite.
